Avial

Avial is an important dish in the traditional  Kerala feast (sadhya). No kerala feast complete without avial.
 Its a thick mixture of different vegetables beautifully blended with coconut mixture and yogurt. Must say its an absolute bliss !!!

Serves:- 4-5
INGREDIENTS:-
  • Raw Banana /Pachakaya -  1 
  • Drumstick /Muringakkaya - 2
  • Snake gourd /Padavalanga - small 
  • Carrot - 1 
  • Cucumber /Velarikka - 1 small 
  • Bottle Gourd - 1 small 
  • Long Beans - 5 - 6
  • Turmeric powder - 1 tsp 
  • Coconut grated - 2 cups 
  • Green chilly -  5 -6 
  • Cumin seeds - 1 pinch 
  • Curds - 1 cup lightly sour, beaten 
  • Curry leaves -  1 sprig 
  • Coconut oil - 2 tbsp 
  • Salt  - to taste
P.S: - All the vegetables should be chopped one inch long.
METHOD:-
  • First take a pan add all the chopped vegetables into it along with some water, turmeric powder and salt. Keep stirring this at regular intervals and make sure you add very little water.
     
  • Once this mixture is  half cooked and the water is almost absorbed then add the curd and stir it well. Make sure it does not curdle.
  • Side by side grind coconut, Green chillies, curry leaves and cumin seeds. do not grind it into a fine paste.
  • 2-3 mins after adding curd add this ground coconut mixture to the avial mixture and stir it well.
  • Cook this for approx. 5 mins or till everything is cooked.
  • The avial should be semi liquid. 
  • Just when it begins to boil switch of the flame of the gas and add coconut oil and curry leaves, stir it well and cover it with a lid. And your avial is ready to be served !!!
