Tawa Pulao

 
  One of my favourite recipes right from the streets of Mumbai "Tawa Pulao"...... yes i can imagine the smile on all your faces when you read this. So here's an easy recipe to make this lip smacking dish and experience pure bliss.......

Serves:- 5-6
INGREDIENTS:- 
  • Onions - 2 small (finely Chopped)
  • Tomatoes - 3 medium (finely Chopped)
  • Capsicum - 1 ( finely Chopped)
  • Mushrooms - 400 gms
  • Green Peas - half cup
  • Corn Kernels - half cup
  • Basmati Rice - 2 vatis/ half glass
  • Kashmiri Red chilli Powder : 2 tsp (you can add more as per your requirement).,
  • Pav bhaji masala - 1 and 1/2 tbsp
  • Garam Masala - 1and a 1/2 tbsp
  • Biriyani Masala - 1 tbsp
  • Salt- for taste
  • Oil - 2 tbsp 
  • Coriander Leaves - Finely chopped for garnishing
P.S. : 1.You can add or reduce the masala as per your needs. if you like it more spicy you can add more.
2. You can also substitute above mentioned vegetables with ingredients like potato, paneer, cauliflower etc.
METHOD:-
  • First take the rice and wash it well. 
  • Then take enough water in a deep pan or pot to boil the rice and heat it till small boils appear at the bottom of the pan. Once this is done add the rice to this water along with some salt and cook it just till the basmati rice grows a little longer. Do not cook it completely. It should not turn soft when you touch the rice you will see that it is still slightly hard. You can cook it in the water for Maximum4-5 mins.
  • After that drain the rice and keep it aside. 
  • Now in another tawa or deep pan take some oil and heat it.
  • Once the oil is heated add the chopped onions to it and saute it till it turns transparent.
  • After that add the capsicum and saute it for 2-3 mins.
  • Once that is done add the chopped tomatoes.
  • Once the tomatoes become slightly soft and its water is absorbed add the mushrooms to the mixture. The mushrooms will leave a lot of water. Saute the mixture till all the water is absorbed.
  • After the water is absorbed add the kashmiri red chilli powder, Garam masala, Pav bhaji masala ,biriyani masala and salt, mix it well with the vegetables and cook it for a minute.  
  • Then add the corn and peas and mix it well again.
  • Finally add the half cooked rice and mix it well. add little water enough for the rice to cook properly. Cover it with a lid and let the rice cook. Allow the water to get absorbed.
  • Garnish it with coriander leaves and your tawa pulao is ready to be served!!!
