All happiness depends on a leisurely breakfast... so here's an interesting recipe for your breakfast, "Spinach and corn sandwich" which is not only healthy but also delicious and easy to make.

INGREDIENTS:-
- Brown Bread - 8 Slices( you can use any bread as per your convenience)
- Processed cheese or Mozzarella - 50 gms or as per your need
- Spinach leaves chopped - 20- 25 leaves
- Corn kernels - 1/2 cup boiled
- Butter - 2 and a 1/2 tbsp
- Refined flour/ Maida - 1 and a 1/2 tbsp
- Milk - Half a cup (add more if required)
- Salt - for taste
- Crushed black peppercorns - for taste
- Little olive oil - to drizzle
- Oregano - to sprinkle
- Red chilli flakes - to sprinkle
- Melt butter in a non stick pan.
- Add refined flour/ maida and saute till colour changes lightly.
- Then add milk and stir continuously to avoid lumps.
- When the sauce thickens you can add the chopped spinach and boiled corn kernels.
- Add salt and crushed black peppercons and mix well.
- Then take this mixture into a bowl add grated cheese and mix it well again.
- Spread the mixture on one slice of the bread sprinkle red chilli flakes and oregano and cover it with another slice of bread.
- Repeat it with the other breads.
- Drizzle some olive oil over each sandwich and toast them in a pan or grill till they turn golden evenly on both sides.
- Cut each sandwich into 2 pieces and serve hot !!!
