Spinach and Corn Sandwich

All happiness depends on a leisurely breakfast... so here's an interesting recipe for your breakfast, "Spinach and corn sandwich" which is not only healthy but also delicious and easy to make.

Serves:- 4-5
INGREDIENTS:-
  • Brown Bread - 8 Slices( you can use any bread as per your convenience)
  • Processed cheese or Mozzarella - 50 gms or as per your need
  • Spinach leaves chopped - 20- 25 leaves
  • Corn kernels - 1/2 cup boiled
  • Butter - 2 and a 1/2 tbsp
  • Refined flour/ Maida - 1 and a 1/2 tbsp
  • Milk - Half a cup (add more if required)
  • Salt - for taste
  • Crushed black peppercorns - for taste
  • Little olive oil - to drizzle
  • Oregano - to sprinkle
  • Red chilli flakes -  to sprinkle
METHOD:-
  • Melt butter in a non stick pan.
  • Add refined flour/ maida and saute till colour changes lightly.
  • Then add milk and stir continuously to avoid lumps.
  • When the sauce thickens you can add the chopped spinach and boiled corn kernels.
  • Add salt and crushed black peppercons and mix well. 
  • Then take this mixture into a bowl add  grated cheese and mix it well again.
  • Spread the mixture on one slice of the bread sprinkle red chilli flakes and oregano and cover it with another slice of bread.
  • Repeat it with the other breads.
  • Drizzle some olive oil over each sandwich and toast them in a pan or grill till they turn golden evenly on both sides.
  • Cut each sandwich into 2 pieces and serve hot !!!
