Today's post is a guest recipe made by none other than my cute Mommy!!!.. This stuffed bhindi which she makes is something I relish on, its healthy and delicious all at the same time !!!
She sent me a picture of this long back when she made it. How I miss those days when I used to sit back and mummy cooked all what I like ... those where the best days.
So without further ado, I'm posting this simple recipe made by My Amma on her special day... Happy Birthday Amma!!!

Serves:- 3-4
INGREDIENTS:-
- Lady's Finger/ Okra - 25-30 medium sized (make sure they are approximately of the same size so that they are evenly cooked)
- Oil - 3-4 tbsp ( add more if required)
- Cumin seeds - 1 tsp
- Grated Coconut - 1 cup (you can add more if you like)
- Red chilli powder - 1 tsp and little more
- Turmeric powder - 1/2 tsp
- Coriander powder - 1 tsp
- Asafoetida - 1/2 tsp
- Salt - for taste
- Coriander Leaves - 2 tbsp, finely chopped
- First wash the lady's finger/ Okra properly and cut the top of the lady's finger/ Okra and create a small slit in the middle, without cutting it into 2 halves like its shown in the picture below.
- Take all the ingredients mentioned for the stuffing together in a plate or bowl and mix them together.
- Now take the stuffing and put them into the slit created on the lady's finger/ okra. Do not over stuff. Keep the remaining stuffing aside as you will require this in the end.
- Once this is done, keep this aside, take a kadai or a deep pan and add some oil enough to lightly fry the bhindi.
- Add cumin seeds once the oil heats.
- After the cumin seeds crackle add the stuffed lady's finger/okra into the pan carefully.
- Cover the pan and let it cook for 1-2 mins, after that take off the lid and stir it lightly and cover it with a lid again.
- Cook it on medium flame till its fried and starts turning brown.
- Just 5 mins before you take it off the flame add the remaining stuffing into this and stir it well.
- Switch of the flame once lady's finger/okra turns brown and serve it hot with rotis.
