The very thought of Pav Bhaji reminds us of the streets of Mumbai... and if you want to taste one of the best pav bhaji's then it'll be probably served by these vendors.
I always wanted the street style flavour when I made pav bhaji at home. This recipe gave me exactly what I was looking for. The boiled and mashed vegetables give it a smooth at the same time chunky texture and the well blended pav bhaji masala gives it this irresistible, mouthwatering aroma and taste.
I've always liked my bhaji a little spicy served with a buttery shallow fried kadak (crispy) pav (bun). You can lower the spices incase you like it milder.

Serves:- 4-5
INGREDIENTS:-
- Cauliflower - medium sized
- Potatoes - 4 medium sized
- Capsicum - 1
- Peas - 1 cup
- Onion - 1 large, chopped
- Garlic - 4 pods, chopped
- Tomatoes - 4 medium, chopped
- Pav Bhaji masala - 2 tbsp
- Garam Masala - 1 tbsp
- Red Chilli powder/ Kashmiri red chilli powder - 2 tsp
- Turmeric powder - 1/2 tsp
- Butter - 2 tbsp (You can add more If required)
- Oil - 2 tbsp
- Salt to taste
- Pav - as many you want
- Onion - 1 small, chopped
- Coriander leaves - 2 tbsp, chopped
- Butter - as much as you like
- Lime - 1/2
- First pressure cook the potato, cauliflower, peas, and capsicum till soft.
- Meanwhile finely chop the onions and garlic.
- Then roughly chop the tomatoes and put them in a blender or mixer and make a smooth puree.
- Once the vegetables are pressure cooked. take them out and then peel the skin of the potatoes. Place all these vegetables in a bowl and mash them well with a masher and make it into a paste. You can even lightly mash them if you like small pieces of the vegetable in your bhaji.
- Once all this is done, take a deep pan or kadai add some oil and butter, you can only use either only oil or only butter too or take little of both and heat it.
- Once the oil/butter heats up add the onions and saute it till it turns light brown.
- Then add the garlic and saute it for a min
- Once its done add the pav bhaji masala and mix it well.
- After that add the tomato puree and cook it till the water is absorbed and oil starts leaving the masala from the sides.
- Then add the rest of the spices like red chili powder, turmeric powder and garam masala, you can increase or decrease the spices according to your liking.
- Mix it well and cook this for about 2 mins.
- Add the mashed vegetables and mix it well till the vegetables and masala blend well and cook this for about 5 mins.
- Add a spoon of butter on top close the lid and allow the butter to melt n the kadai.
- Garnish it with finely chopped onions, coriander, a dash of lime juice and butter before serving it preferably with toasted Pav .
