Stuffed Mushrooms

Stuffed Mushrooms should be in every home cook's collection. They're easy to make, they're great for parties, and you can use different kind of stuffing. So here comes a recipe which gives you a mushroom cap stuffed with a glorious mixture and fried until golden brown.

INGREDIENTS:-

Filling:
  • Mushroom- 250 gms (only mushroom cap)
  • Onion - 1 Finely chopped
  • Garlic - 1 tsp
  • Capsicum - 1/2 Finely chopped
  • Broccoli -  one floret
  • Mushroom stems -  1/2 tbsp finely chopped
  • Oil- 1/2 tbsp
  • Mozzarella Cheese -  80 gms grated ( you can also use processed cheese if you don't get mozzarella).
  • Salt-  to taste
  • Black pepper- 1/2 tbsp
  •  Coriander Leaves- 1 tsp
* You can use vegetables according to your choice, you can also use red bell pepper etc.

Batter:- 
  • Refined flour/ Maida - 45 gms
  • Salt- to taste
  • Water- as required
  • Bread crumbs - 500 gms
 METHOD:-
  • Take the mushrooms, remove their stems and create a cavity in the cap of the mushrooms.
  • Now to make the stuffing take onions, capsicum, garlic, broccoli, mushroom stems (you can take other vegetables according to your choice) and finely chop them in such a way that it can be stuffed into the mushroom cavity.
  • After chopping them, take a pan and add oil just enough to saute the stuffing.
  • First add the garlic once the oil is heated.
  • When the raw smell of the garlic leaves add onions and saute.
  •  After that add all the other vegetables which have been chopped and lightly saute it and season them with black pepper and salt. 
  • Add coriander leaves to the mixture and mix it well and leave it aside to cool. once it cools down add grated mozzarella cheeze to the mixture and mix it well again.
  •  To prepare the batter take refined flour/ maida and water and make a semi liquid batter which is enough to coat the stuffed mushrooms so that the bread crumbs stick to it. ( make sure the batter does not become very loose).
  • Once this is done, take the stuffing and start filling it in all the mushroom caps. Do not over stuff it as they can come out while you fry. Fill in only how much the space can take.
  • Once you finish filling the stuffing in all the mushrooms, join two stuffed mushrooms and stick them together with the help of a toothpick in such a way that the mouth or the side of the stuffing of the mushrooms are joined together.
  • Clean the sides and repeat this for the rest of the mushrooms.
  • After this is done heat some oil in a deep pan enough to deep fry the mushrooms.
  • Take one set of mushrooms stuck on a toothpick, dip them in the batter prepared  remove them once it is nicely coated and again dip them in the bread crumbs and coat them well.
  • Place them in the pan once the oil is heated.
  • Fry the mushroom till it turns golden.
  • Then you can remove it and drain them on tissue.
  • Repeat this procedure for the rest of the mushrooms and your lip smacking stuffed mushrooms are ready to be served
